Sunday’s Cake | Frozen Pomegranate & Cashew Cake

Another great cake from Green Kitchen Stories. Just have one thing to add with the pomegranate layer. I followed the recipe and found out to late that they mixed a part of the cashew layer with the pomegranate layer. That will make for a more creamy top layer. This cake is such a treat and I made it for my birthday last week and how pretty are pomegranates?! You can find the recipe here

 

Tisvildeleje | Zealand

We spend late summer in Tisvildeleje in north of Zealand. It was filled with wild blueberries, skinny dipping, fireplace and a glass of champagne every day. Needless to say we had a blast. Since we came late in the season we almost had this little summer town for ourselves. Lots and lots of long walks, a lunch at Helenekilde, coffees in town at Den Røde Tomat who also happened to make a really good pizza and a cinema where you could bring your cup of coffee into the cinema hall and they would run to the bakery after fresh croissants if you fancied that…my oh my, my favorite place to be this summer. Great to stay in Denmark where the summer is beyond. Best choice ever!

 

Botanical garden | Copenhagen

Have a thing for botanical gardens. The oh so pretty palm houses where the air is damp and filled with palms and other tropical and subtropical plants and the lovely garden of course. If one day I get a (for now a dream) summerhouse I want to build a greenhouse out of old windows like this and have a green roof of succulents….and that will be my own botanical garden garden. When living in NYC I often went to Brooklyn Botanic Garden and I love this place. The japanese garden is oh so lovely.

Sunday’s Cake | Warm Pumpkin & Coconut Muffins

Long pause from here – life has kept me busy in a very good way.

 

Lately I have  really gotten into cooking from some of my favorite food blogs and my cookbooks…that was my New Year resolution. The rule is I’m not allowed to buy any more cookbooks before I start cooking from the ones I have and there you have it…shortly after this I went out and bought The Kinfolk Table but that has been my only slip if library cookbooks doesn’t count?! If you follow  me on my instagram maybe you have noticed my breakfast quest like these ones here and here. Green Kitchen Stories has been my go-to for breakfast recipes for a long time and I love so many of their recipes. I’ll do a list of a few of my breakfast favorites soon.  So today I’ll start a series on my journal with Sunday ‘s Cake. Let me start with these Warm Pumpkin & Coconut Muffins. Gluten- and dairy free. Really delicious, moist and a real autumn treat with the spices and the hokkaido pumpkin.

 

You can find the recipe here . I adapted it a little. Changed the orange for a clementine and used agave instead of maple syrup.

 

 

Adisgladis | Stockholm

This shop is next door to my favorite coffee shop Drop Coffee I wrote about here. Adisgladis  is this great shop and web-shop where you can find organic, upcycling off grid very usefull things and clothes. Bought my Swedish Kavat winter boots here, and lots of presents. In love with the Stanley thermos…how good looking are they. Have also invested in some of the great Klean Kanteen bottles.  Gonna last a life time and I love that idea instead of use & toss.

Discovering our city | Foderbrættet

Our new hood these days is Vesterbro, Copenhagen and after a long walk the other day we passed Foderbrættet on our way home. Popped in for at late lunch and it didn’t disappoint. Read Bitchslap’s review here and heard about this hot-dog heaven from so many already even though this establishment is only 6 weeks old. Love the booths and we got to sit there. Yay! So good service which is kinda rare for Copenhagen….or maybe I’ve been gone for to long. Tested the beef, tempura cod and the merguez (lamb). It’s a tough one but think my fave was the beef hot-dog…..and then again the tempura cod was delicious as well.

This is hands down my favorite coffee shop in Stockholm. Lived way to close to this place and came by a little to often. Happy baristas makes a good cup of joe and that’s exactly what’s going on here. We got to place a stack of Bitchslap mags here as well….thanks Drop Coffee and thanks Benjamin (hand model) and congrats on winning the new Swedish Brewers Cup. Was so lucky to get beans from Drop Coffee from Beanerd Coffee….remember this insta here.
